Registered Dietician

I have to say that I was skeptical at first. But I found that consulting a professional that is well-versed in nutrition and the GF diet (she's Celiac and so is her daughter) was worthwhile! I'm happy to say that I came away with a new-found appreciation for the work that professionals do, as well as great-to-know information that is all jumbled on the Internet!

She confirmed many things that I already knew. She was helpful with local information. And she was informed on the misconceptions that are out there! It was nice to have someone to bounce ideas off of, especially when she'd seen so many different people and different reactions within the Celiac community. She is willing to do the legwork to determine if something that I reacted to is actually gluten-containing or not. Which is great - I don't have to go through eating it again to see if I react in the same way!

Hopefully, I will be able to continue updating this blog with yummy recipes that I find or create that are gluten-free, now that I have a better understanding of what is out there!
